For the Beef Filling
- 300 g ground beef go for a standard mince with some fat content for the best flavour
- 1 small onion finely diced
- 3 garlic cloves minced
- 1 tbsp tomato paste
- 1 tsp chipotle paste
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- 1 tsp oregano
- ½ tsp cayenne pepper
- ½ tsp chilli flakes
- Salt and black pepper to taste
- 1 tsp Worcestershire sauce optional — adds an extra layer of umami depth
- Juice of ½ lime
For the Tacos
- Flour tortillas small to medium sized
- Vegetable oil for pan- frying
- 1 cup shredded mozzarella
- ½ cup shredded mature cheddar
For the Chipotle Sauce
- ½ cup mayonnaise
- 1 tsp chipotle paste
- 1 tsp lime juice
- Small drizzle of honey
- Pinch of smoked paprika
- Salt to taste
For the Fresh Salsa
- 2 tomatoes diced
- ¼ onion finely diced
- Small handful of coriander chopped
- ½ cup cucumber diced
- Juice of 1 lime
- Salt and pepper to taste
Optional Toppings
- Jalapeño slices
- Pickled onions
- Shredded lettuce
Make the salsa
Combine the diced tomatoes, cucumber, onion, coriander, lime juice, salt, and pepper in a bowl. Mix well and set aside.
Make the chipotle sauce
Stir together the mayonnaise, chipotle paste, lime juice, honey, smoked paprika, and salt until smooth. Refrigerate until ready to serve.
Cook the beef
Heat a little oil in a large pan over medium-high heat. Add the ground beef and cook undisturbed for 2–3 minutes to brown. Break it up and cook until no pink remains.
Add the onion and cook for 3 minutes until softened. Stir in the garlic, tomato paste, chipotle paste, smoked paprika, cumin, oregano, cayenne, chilli flakes, salt, and pepper. Cook for 1 minute until fragrant.
Stir in the Worcestershire sauce (if using) and cook until the beef is rich and mostly dry. Finish with a squeeze of lime juice.
Assemble the tacos
Heat a lightly oiled pan over medium heat. Add a tortilla, sprinkle cheese over one half, top with the beef, then add a little more cheese. Fold the tortilla over the filling.
Cook for 2–3 minutes per side until the tortilla is golden and crispy and the cheese has melted. Repeat with the remaining tacos.
Serve immediately with the homemade salsa, chipotle sauce, and your favourite toppings.
